The enzyme invertase acts on sucrose until optical rotation is zero. what fraction of the sucrose has been hydrolysed?

    b. 0.63 Laevorotation of fructose is -90.4 degree whereas dextro-rotation of glucose is +52.5 degree...hence, solution is laevorotatory in nature. Hydrolysis of sucrose brings about a change in the sign of rotation from dextro(+) to laevo(-) and product is known as invert sugar. 52.7(x) - 92 (1-x)=0 x=0.63
