This sentence is little printing mistake. An important feature of plate tectonics is its recognition. Means what type of plate motion is it convergent, divergent or transform. The continental plates don't deform is the only approximation. but infact they do deform and don't get destroyed as the destruction occurs and reforms in case of Oceanic plates. Wilson cycle you can see for better clarification.

The statement indicates that lithospheric plates are rigid in nature thus it resists any deformation caused by plate movement. As a result of its rigid nature the continental shape doesn't deform easily on a larger scale and can be approximated with fairly continuous nature in general.
