Unsaturated fatty acid has at least one double or triple bond. Saturated has no multiple bonds. The energy required to break a carbon-carbon double bond (C=C) is 146 kcal/mol and to break a carbon-carbon triple bond is 212 kcal/ mol, while only 80 kcal/ mol energy is required to break carbon- carbon single bond. So for the same chain length even if only 1 unsaturation is present, more energy will be required to break the multiple bond of the unsaturated fatty acid. Hence, more energy will be required for oxidation of unsaturated fatty acid than that for saturated fatty acid.
