Earth is formed from a molten hot gaseous and liquid sphere. But it was rotating at that time also so the denser like Iron ,Nickel went inside the core. And most of the less dense substance floated to the top to form the crust . Majority of crust is made up of felsic rocks like granite .They fomed during ancient archean time . And in today when we are exploring then the old will definitely remain under the surface. Igneous rocks are called intrusive when they cool and solidify beneath the surface. Intrusive rocks form plutons and so are also called plutonic. A pluton is an igneous intrusive rock body that has cooled in the crust. When a large thick pile of sediment is over the crust of granite then the molten magma inside remain inside and gets crystallized there. If it flows to top in some case like volcano then that is known as volcanic rock. And under the ocean when the mid oceanic ridge spreads the mafic magma comes to the ocean surface giving rise to instant cooled pillow basalt. And also we know the more the sillica saturation the more the viscous the magma will be . so in case of granite it can't flow to the top.
